Please consult the NSW Food Authority’s Guidelines for Food Businesses at Temporary Events (http://www.foodauthority.nsw.gov.au/_Documents/retail/temp_events_guideline.pdf) to check your proposed stall meets all requirements, and advise your activity to the NSW Food Authority. All vendors who are deemed to be a “food business” by the Guidelines (see pg. 4) will be expected to operate in accordance with the Guidelines. Moreover, in accordance with the Guidelines, certain vendors will be expected to appoint a Food Safety Supervisor (FSS). These vendors are those that sell food that is ready-to-eat, potentially hazardous (requiring temperature control) and not sold and served in the supplier’s original packaging.
